Flaxseed Baked Oatmeal (Quadrupled)


🍓 Flaxseed Baked Oatmeal (Quadrupled)

Ingredients

8 cups rolled oats
4 tablespoons ground flaxseed + 12 tablespoons water (to replace 4 eggs)
4 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
5 cups milk (dairy or non-dairy)
1 cup maple syrup or honey
4 teaspoons vanilla extract
8 tablespoons (½ cup) melted coconut oil (or butter)
4 cups fruit, chopped or pureed (if using from canned, reserve drained liquid to adjust consistency after mixing all ingredients)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a large 9x13-inch baking dish (or two 8x8-inch pans).

  2. Prepare flax eggs: In a small bowl, combine the ground flaxseed and water. Let it sit for 5 minutes until it thickens.

  3. Mix dry ingredients: In a large bowl, combine oats, baking powder, cinnamon, and salt.

  4. Mix wet ingredients: In another bowl, whisk together milk, maple syrup, vanilla, melted coconut oil, and the prepared flax eggs.

  5. Combine: Pour the wet mixture into the dry ingredients and stir until combined. Fold in the berries.

  6. Bake: Pour into the prepared dish and bake for 35–40 minutes until the top is golden and the center is set.

  7. Cool and serve: Let it cool for 5–10 minutes before slicing. Enjoy warm or cold!
